Hello and welcome to another My Week on Wednesday where I take a few moments to share what I’ve been doing over the week. I share some of the blogs I’ve visited, and some of the things that I have learned.

I hope everyone had a wonderful Fourth of July Weekend. We enjoyed plenty of fun-in-the-sun, but took a few minutes, at the suggestion of Gentleman Homesteading Consulting, for this Important Independence Day Tradition — reading the Declaration of Independence. I have read it, of course, but I had never really considered making it an Independence Day Tradition before… though, interestingly, if you read the Little House on the Prairie books, both Laura (in Little Town on the Prairie, I think) and Almanzo (in Farmer Boy) told of reading the Declaration of Independence as part of their towns’ Fourth of July celebrations. We have watched 1776 many times, though — but we missed it this year due to absolutely fabulous weather! 😉

Now… on to things that sound delicious:

Things that actually are delicious. As in I made them, and I know for sure. 😉

  • Strawberry Beet Green Salad with Strawberry Dressing — Yes, I did share this exact same post last week, but the dressing is so amazingly, fabulously wonderful that I thought I’d share it again. I wouldn’t want you to miss out!!!

  • Coconut Cake with Lemon Glaze — I made it for my mommy’s birthday, and she loved it! (Though, in the spirit of full disclosure, I didn’t have any einkhorn flour, so I used a mixture of sprouted flour and plain old white flour, instead. And I did, against Healthy Roots, Happy Soul’s suggestion, make it in a bunt pan — because when have you ever know me to follow directions?)

Other really important things… How to Cut a Watermelon — the easy way. You just need to read this post. Seriously. Thanks Lady Lee’s Home! 🙂

And these great tips on Gardening for Pollinators. We need our bees and other pollinators, my friends; we won’t survive without them. So go ahead and make a wonderful (beautiful!) pollinator-friendly place in your yard.

Finally, have you signed the petition to get GMOs out of Girl Scout Cookies yet? This, you might remember, is an issue near and dear to my heart. Last year, when I wrote a post about Why my Daughter will NOT be Selling Girl Scout Cookies, I found out about another brave little Girl Scout who was trying to help change the world! She’s working hard to get the Girl Scouts to remove GMOs from their cookies — can you help her out?
